kale salad

This is one of my favorite recipes and I wanted to share it with you. This recipe evolved slightly from the Kale Salad recipe in Kris Carr’s Crazy Sexy Diet Cookbook. I make it at least 2x per week. You can pair it with tofu, tempeh or just add on some nutritional yeast. My family loves it. Well 3 of us anyway.

It’s easy and quick to make and is only 6 ingredients.

1 small bunch of kale

1 avocado

1/2 red pepper

1/4 cup or less of red onion

1 tsp of sea salt

a couple swirls of lemon olive oil

Wash everything before starting and use organic ingredients where you can. First, tear or cut kale leaves off of stems into bite size pieces and put in a large bowl. Then cut avocado into bite size pieces and use your hands to mix with the kale so it coats the kale leaves. Add in red pepper, red onion and salt. Then finish off by adding in the lemon olive oil and use hands to mix all together until everything is coated (can also mix with large spoon but I feel like it mixes better when you use your hands).
